Will it brown after thawing?

Surface oxidation is minimal — held under plastic in the cooler, halves stay green for the full service day. For longer holds, a light brush of lime juice extends color.

Can we thaw in water?

Yes — submerged in cool tap water (40 °F or below), halves thaw in about 45 minutes. We prefer overnight refrigerated thaw for the best texture.
